A notable feature of Xining snacks is that some of them are given names with the surname of their initiator. The local snacks include the Liangfen, Niangpi, Zasui Tang, Muslim Yoghurt, and Terrine, while the other famous local dishes are Mutton Eaten with Fingers, Gamianpian (sliced dough), stretched noodles, Sanzi (a fried wheaten food) and Zanba (buttered dough), beef and dairy food as well.
The main ingredient of Liangfen is pea flour, which is usually cut into short strips with a variety of condiments like vinegar, garlic, mustard and salt. If you would like to have try, you can find it every where. Anyway, Mazhong Shifu is kindly suggested to you as it is famous for stir-fried Liangfen. It located at No.11-16 Mojia Jie, Xining.
This dish is made from starch that has been separated from flour. It is cut into thin strips and usually being sold in summer, about 4RMB. It tastes very cool, and a little spicy. The most famous brand is Mazhong niangpi, and can be found on Mojia Jie.
